I know it's been over a month since you posted.
I was having this exact same problem.
Spend about 1-2 weeks trying to get it sorted.
Of course, checked the normal things like RAM, overheating, etc. RAM usage never went above 2GB on a 4GB Pi.
Made sure everything was fully up to date (was a fresh flash onto the SD Card)
No issues with overheating.
Played with open file limits, that seemed to be the issue. If I lowered the limit then it would look exactly the same and there were errors about open files in the Chrome Debug logs when i turned them on, but no.
I set up a script to reboot the pi every night at 2:00am i think.
Seemed to always last for around 12 hours and then chrome would crash.
I've reverted back to X11 using raspi-config and then used this process for setting up the kiosk.

It doesn't have a part to switch between tabs which would be nice, but it's good enough for now.
