Let me count them for you ( Gyro, Acc, Mag, GPS, air speed , lidar, RC input, ...etc)
Not all components use I2C, some use SPI and others use UART.

I2C is not the problem in my design at all since the bus can support multi nodes. My concern is about UART and SPIs.

Note: I avoided CAN bus since RP2040 doesn't support it. I am not sure if the PIO SW libraries on Github are working well or not.

I agree with you about the STM32F405. The more expensive ($9) one with 144-pin has rich peripherals but at least much cheaper than other alternatives.
SPI is a bus a well --> 3 sensors require 3 chip selects but only a single SPI peripheral i.e.

I'm quite sure you know well what you need, so will leave the system architecture with you. Will also step back from making any proposals of system design as I only have a more than 10 years background in flight controllers which seems unsuffienct.
