I've done further test, and the SD card really has a problem now. A few things were strange in this case, as I was able to write the ssh and the userconf.txt files. Ejecting and reinserting the SD card on the computer to confirm they were there before inserting it on the Pi.
Maybe the SD card died on the step of expanding the storage when on the Pi already? The SD card had, at least, 3 years, with the Pi being on 24/7 and writing sensor data every 2 minutes (I did a backup of the old content of the SD card before formatting it, and it was all there).
Using another SD card, I managed to install the new OS and got the Pi working again.
Being clear the old SD card died, the only remaining question I have is: what is the "Verify" process doing on the Imager? That /etc/fstab doesn't make sense, yet the Imager did not warn of any problems.
