Use metal boxes with all holes in the bottom, no need to fully seal, indeed make sure there is a small drain hole just in case. The heat from the Pi5 should prevent any humidity problems because there will be no condensation on the Pi, just never switch them off, even at idle there is probably enough heat.

There will be a lot of variables as to whether the inside of the box would collect condensation, I suspect not but just in case you could put a plastic "umbrella" above the Pi, inside the box, so no drips would land on it.

You could put vertically finned heatsinks on sides of the outside of the (preferably aluminium) box.

I'd use an active cooler on the Pi5 which will spread the heat around the metal box, might be an idea to paint the inside of the boxes matt black.

A Pi5 would throttle badly if it was potted unless you have NASA priced potting compound.
