no
boot raspberry os desktop on a sd
use imager or sd copier to write the os to nvme
power off
remove sd
power on

as simple as pi
don't mess with the boot order, recovery can only be done by sd

pcie3 is okay if your ssd supports it, but not a necessary change, it'll run just fine
