You could boot your Pi from another device and then use gparted to shrink the big partition down to a value you like better.
Not sure how I'd do that. I don't have any other Pi5 on hand and it's NVMe.
You don't need another Pi.. Install pi-imager on the NVMe drive. Use that to write a bootable image to an SD card in the Pi's slot. Set the boot order to go to the SD first. Then just reboot. You can install gparted on the SD card when you've booted from it.
