I can't help with the video not rotating. You could try switching to x11 instead of Wayland. Otherwise I think you need to ask on a new post in the appropriate topic. Things have changed a lot in the PI between 4 and 5
pipresents -kms might work on Bookworm. You will have to use the X11 desktop environment, not Wayland and, the gpiozero I/O plugin. I did try it but had trouble with virtual environment so gave up and started on a Bookworm compatible version.
If you want to use a portrait screen it would be very easy to define a half screen mpv video window in which to play the video using the rest of the screen for images or text. Alternatively you could have two concurrent shows and use the Show canvas to give each half the screen.
