Let me preference this by saying that I'm in Hong Kong, and this question is aimed at parents who've delayed introducing screens as late at 6 or 7 years old.

What kits are available for learning about electronics in general, or computing systems that are fully offline, yet provide masses of learning opportunities?

A parent recently asked me about learning about electronics, but everything I could think of needed connecting online for firmware updates or reading online guides. When I contrast this to my childhood, we had to get everything via floppy disk, so it was easy to stay focused and to see what the tech is being used for. What's the modern equivalent of that?

To cut a long story short (this long story is called McCullen's The Medium is the Message), giving a child a Raspberry Pi and just trying to keep the WiFi password secret is not sending the right message, hence my question about offline tech.
Maybe the Rachel Pi project would help.

The idea is to set up a local webserver loaded with a curated selection of media useful for learning.
